Parwal ki Mithai: A Surprising Sweet Treat
Parwal ki Mithai is a testament to the culinary creativity of Bihar. This unusual sweet uses a vegetable, the pointed gourd (parwal), as its base. It's a delicacy that often surprises and delights those who taste it for the first time. It showcases the same ingenuity as turning sattu into a superfood (Sattu) and is a unique part of Bihari Cuisine. Another unique sweet is Belgrami.,To make this sweet, the parwal is first peeled, deseeded, and then boiled in sugar syrup until it becomes soft and translucent. This candied parwal shell is then stuffed with a rich and sweet filling made from khoya (reduced milk solids), sugar, chopped nuts, and cardamom powder.,The vibrant green of the parwal contrasts beautifully with the creamy white filling, making it visually appealing. Often garnished with silver leaf (vark) or pistachios, Parwal ki Mithai is a popular sweet during festivals and weddings, similar to Chandrakala. It's a perfect example of how Bihari cuisine can transform simple, everyday ingredients into something truly special.
