Anarsa: The Festive Rice Flour Sweet
Anarsa is a beloved traditional sweet in Bihar, especially prepared during festivals like Diwali and Teej. It's a pastry-like sweet made from a fermented dough of soaked and ground rice flour and jaggery or sugar. It is a staple of Bihari Cuisine. Another festive sweet is Malpua.,The preparation of Anarsa is a patient process. The rice is soaked, dried, and ground into a fine powder. This is then mixed with powdered sugar or jaggery to form a dough, which is left to ferment for a couple of days. Small discs are then shaped from the dough, coated with poppy seeds or sesame seeds, and deep-fried in ghee on low heat.,The result is a beautiful sweet that is crispy and golden on the outside, and soft and chewy on the inside. The nutty flavor of the sesame seeds complements the sweetness of the rice and jaggery perfectly. Anarsa is a true labor of love and a delicious part of Bihar's festive food culture, alongside other treats like Khurma.
